- 1 large cucumber, sliced
- 1 large pineapple, peeled and cubed
- 3 piece of fresh ginger, peeled and sliced
- 4 cup pineapple tea (see Note)
- 2 tablespoons apple cider vinegar
- Juice of ½ lemon
Make the pineapple tea: Steep pineapple peel and cores in 4 cups of hot water for 5–7 minutes. Strain and cool.
Blend ingredients: In a blender, combine the cucumber slices, pineapple cubes, ginger slices, apple cider vinegar, lemon juice, and 2 cups of the cooled pineapple tea. Blend until smooth.
Strain: Pour the mixture through a strainer into a large glass jar, pressing gently to extract all liquid.
Mix and chill: Add the remaining 2 cups of pineapple tea to the jar, stir well, and refrigerate for at least 2 hours to let flavors meld.
Serve: Pour into glasses over ice and enjoy throughout the day.
- Pineapple tea can be substituted with plain green tea or coconut water for variety.
- Adjust the amount of apple cider vinegar to taste; its acidity helps moderate blood sugar spikes from pineapple’s natural sugars.
