Ingredients

  • 1/2 cup Mayo
  • 2 Tablespoons Thai sweet chili sauce
  • 2-3 Tablespoons Sriracha
  • 2 cups vegetable oil for frying
  • 1 cup cornstarch
  • 1 cup Buttermilk
  • 1/2 Lb small to medium peeled and deveined shrimp
  • Green onions and spring mix lettuce for garnish (optional)

Instructions

  • In a small bowl, mix together the mayo, Thai sweet chili sauce, and Sriracha to make the Bang Bang sauce. Set aside.
  • Heat the vegetable oil in a frying pan or deep fryer to 350°F (175°C).
  • Place the cornstarch in one bowl and the buttermilk in another.
  • Dip each shrimp first into the buttermilk, then coat it in cornstarch, shaking off any excess.
  • Fry the shrimp in batches in the hot oil for 2-3 minutes, or until golden brown and crispy.
  • Remove the shrimp with a slotted spoon and drain on a plate lined with paper towels.
  • Once all the shrimp are fried, toss them in the Bang Bang sauce until evenly coated.
  • Serve the shrimp over a bed of spring mix lettuce and garnish with chopped green onions, if desired.

Notes

  • Adjust the amount of Sriracha to control the spiciness of the sauce.
  • You can use larger shrimp, but be sure to adjust the frying time accordingly to ensure they are cooked through.
