- 1/2 cup Mayo
- 2 Tablespoons Thai sweet chili sauce
- 2-3 Tablespoons Sriracha
- 2 cups vegetable oil for frying
- 1 cup cornstarch
- 1 cup Buttermilk
- 1/2 Lb small to medium peeled and deveined shrimp
- Green onions and spring mix lettuce for garnish (optional)
In a small bowl, mix together the mayo, Thai sweet chili sauce, and Sriracha to make the Bang Bang sauce. Set aside.
Heat the vegetable oil in a frying pan or deep fryer to 350°F (175°C).
Place the cornstarch in one bowl and the buttermilk in another.
Dip each shrimp first into the buttermilk, then coat it in cornstarch, shaking off any excess.
Fry the shrimp in batches in the hot oil for 2-3 minutes, or until golden brown and crispy.
Remove the shrimp with a slotted spoon and drain on a plate lined with paper towels.
Once all the shrimp are fried, toss them in the Bang Bang sauce until evenly coated.
Serve the shrimp over a bed of spring mix lettuce and garnish with chopped green onions, if desired.
- Adjust the amount of Sriracha to control the spiciness of the sauce.
- You can use larger shrimp, but be sure to adjust the frying time accordingly to ensure they are cooked through.
